Christmas Cookie Countdown

Every year, at about this time of year I make fudge for the hub's birthday. It started during our totally-broke days when this was the only thing I did for his birthday. It's an awesome recipe from the Better Homes & Gardens Cookbook

4  cups sugar
2  5 ounce can (1-1/3 cups total) evaporated milk
1  cup butter or margarine
1  12 ounce package (2 cups) semisweet chocolate pieces
1 7 oz dark or milk chocolate candy bar roughly cut
1  7 ounce jar marshmallow creme
1  cup chopped pecans, peanuts or walnuts
1  teaspoon vanilla

Line a 13x9x2-inch baking pan with foil, wax or parchment paper, extending it over edges of pan. Butter paper/foil; set aside.

Butter sides of a heavy 3-quart saucepan. In saucepan combine sugar, evaporated milk, and butter. Cook and stir over medium-high heat till mixture boils. Reduce heat to medium; continue cooking and stirring for 10 minutes. Remove pan from heat.

Add candy bar, chocolate pieces, marshmallow creme, nuts and vanilla; stir until chocolate melts and mixture is combined. Beat by hand for about 3 minutes or until mixture becomes very thick and starts to loose it gloss. Spread in the prepared pan.

When fudge is firm, use foil to lift it out of pan. Cut fudge into squares. Store in a tightly covered container in the refrigerator. Makes about 4 pounds (96 pieces).

If you're looking for something a little less labor intensive to do with the kids I highly recommend the Betty Crocker mixes. I made the cookies above with the mix below. I cut them into shapes before they baked and then re-cut them once I got them out of the oven. Just so you know - we ate them all in one day, so you might want to buy more than one mix :)
